Here in America, there are few things we love more than barbecue on hot summer days. While there are a lot of different kinds of barbecue, we know which one is the best—Kansas City barbecue. If you have ever wondered where this delicious food got its start, read below for the history of Kansas City barbecue.
Henry Perry is considered the father of Kansas City barbecue. He served slow-cooked ribs for just 25 cents a slab starting in 1908. He operated out of a trolley barn located at 19th and Highland. Perry came from Memphis, Tennessee, which is why Memphis barbecue and Kansas City barbecue are somewhat similar. However, Kansas City barbecue tends to use more varieties of meats and more sauce.
Throughout the 1920s and 1930s, Perry’s restaurant was a cultural center, especially during the heyday of Kansas City Jazz. Two brothers, Charlie and Arthur Bryant worked with Perry and after Perry’s death, they took over. In 1946, the restaurant was renamed Arthur Bryant’s and is still one of the most popular barbecue restaurants in the country.
Another popular spot is Gates and Sons Bar-B-Q, which was started by Arthur Pinkard and George Gates in 1946.
